Yeast Biscuits

This recipe comes from my grandmother's kitchen. I always looked forward to her making these fluffy, buttery, melt-in-your mouth rolls when we came to visit. These would make a wonderful addition to your Easter dinner menu or other special occasion.


Ingredients

  • 1 package yeast

  • 1/4 cup warm water

  • 2 cups buttermilk, divided

  • 5 cups all-purpose flour

  • 1/4 cup (or less) sugar

  • 1 teaspoon salt

  • 1 teaspoon baking soda

  • 1 cup butter, softened at room temperature

Directions

In a small bowl, dissolve the yeast in warm water. Add 1 cup of buttermilk and set aside.


In another bowl, blend together the flour, sugar, salt, and baking soda. Cut in the butter. Mix in the remaining cup of buttermilk; then add the yeast mixture.


Put in the refrigerator overnight. Roll out to desired thickness and cut with biscuit cutter. Place on greased baking pans and let rise until doubled in size. Bake at 400 degrees for 10-15 minutes. Best served warm.
