Wheat Germ Blueberry Muffins

I love these slightly sweet and nutty muffins. They pair well with a salad or alone with a cup of tea.


Ingredients

  • 2 c. white wheat flour

  • 1/2 c. wheat germ

  • 1 1/2 teaspoons cinnamon

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt

  • 2 eggs

  • 1 1/2 c. milk

  • 1/4 c. unsweetened applesauce

  • 1/4 c. oil

  • 1/2 c. honey

  • 1 teaspoon vanilla

  • 1/2 c. blueberries, fresh or frozen

  • 1/2 c. chopped pecans


Directions

Preheat your oven to 400 degrees. Spray or line muffin pans.


Combine all the dry ingredients in a large bowl - flour, wheat germ, cinnamon, baking powder, and salt.


Combine the rest of the ingredients in another bowl except for the blueberries and pecans. Whisk well until the oil is well combined.


Add the wet ingredients to the dry ingredients and mix well. Add the blueberries and pecans and gently fold in.


Distribute the batter evenly in pans. Bake at 400 for 25 minutes.
