Spicy Pumpkin Muffins

As soon as the first hints of fall arrived, my family would always bake these muffins and quickly devour them with a cup of tea. They are so flavorful and moist although not loaded with oil or sugar. You can also add a streusel topping for special occasions.


Ingredients

  • 1/2 cup honey

  • 1/4 cup oil

  • 2 eggs

  • 1/2 can of pumpkin

  • 1 3/4 cup whole wheat flour

  • 1/4 cup wheat germ or oat bran

  • 3/4 teaspoons baking powder

  • 1/2 teaspoon baking soda

  • 1/8 teaspoon ground cloves

  • 3/4 teaspoons cinnamon

  • 1/8 teaspoon nutmeg

  • 3/4 cup raisins

Directions

Preheat oven to 400 degrees. Grease or line muffin tins.


Place the first four ingredients in a bowl and combine with a wire whisk. Add the remaining ingredients (except for the raisins) and blend well. Gently fold in the raisins.


Bake at 400 degrees for 18 minutes. Remove muffins and allow to cool on wire rack.


Yield: 1 dozen

Streusel Topping:

  • 1 Tablespoon butter, melted

  • 2 teaspoons cinnamon

  • 1/3 cup brown sugar

  • 2 teaspoons flour

  • 1/2 cup chopped nuts, opt.

  • 1/4 cup oatmeal

Combine all the ingredients in a small bowl. Sprinkle on top of muffins before baking.
