Roasted white potatoes, red potatoes, and sweet potatoes are some of my frequent side dishes with our meals. Easy, nutritious, and delicious!
Roasted Sweet Potatoes
Ingredients:
2-3 large sweet potatoes, peeled and cut in bite-sized pieces
2 Tablespoons olive oil
Garlic powder
Pepper
Directions:
Preheat oven to 400 degrees.
Place peeled and cut sweet potato in a baking dish. Add the olive oil and stir well to coat all the potatoes. Sprinkle generously with garlic powder and pepper; stir well. Put in oven and roast for 35-40 minutes, stirring every 15 minutes.
Roasted White or Red Potatoes
Ingredients
Several white or red potatoes (amount depends on your needs), cut in bite-sized pieces (I don't peel them but leave the skin on.)
2 Tablespoons olive oil (you can adjust for the amount of potatoes you are using)
Minced garlic
Salt, to taste
Parsley
Directions:
Preheat oven to 400 degrees.
Place cut potatoes in a large bowl. Add the olive oil and stir well. Sprinkle generously with minced garlic; add a little salt and stir well. Sprinkle lightly with parsley and stir well.
Pour the potatoes into a large baking dish and roast for 30 minutes, stirring once halfway through the baking time.
