Carrot Apple Bread

This bread is an original creation using ingredients that I already had. The yogurt and apples make it moist even though there's little oil, and the carrot, apples, and raisins add their own natural sweetness. It's a guilt-free treat with a cup of tea - especially when fresh out of the oven!


Ingredients

  • 1 3/4 cups whole wheat flour

  • 1 1/2 teaspoons baking powder

  • 1/2 teaspoon baking soda

  • 1 teaspoon cinnamon

  • 1/2 teaspoon salt

  • 1/2 teaspoon ginger

  • 14 teaspoon nutmeg

  • 3 small-medium sized carrots, peeled and grated

  • 2 apples, peeled and grated

  • 1 cup raisins

  • 1/4 cup unsweetened coconut

  • 1/4 cup oil

  • 1/4 cup maple syrup

  • 2 eggs

  • 1 teaspoon vanilla

  • 1 cup plain yogurt (regular or Greek)

Directions

Grease a large loaf pan and set aside. Preheat oven to 375 degrees.


Whisk together all the dry ingredients in a large bowl. In another bowl, combine the oil, maple syrup, eggs, vanilla, and yogurt until well blended. Add the carrot, apples, raisins, and coconut.


Add the wet ingredients to the dry and mix well. Pour the batter into prepared pan. (Note: If you have extra batter, you can make a mini loaf or a few muffins.) Bake for 45- 50 minutes or until golden brown.
