Baked Squash

I normally steam or sauté my zucchini and squash, but this is a fun and different way to serve yellow squash. Many recipes for baked squash add salt, but I've found that the Parmesan cheese adds plenty of taste!


Ingredients

  • 2-3 yellow squash, washed and cut in thin rounds

  • Garlic powder

  • Pepper

  • Parmesan cheese, fresh or other

Directions

Preheat oven to 425 degrees. Line a large baking sheet (jelly roll pan) with parchment paper.


Place the cut squash rounds on the baking sheet. Sprinkle each squash piece with garlic powder, pepper, and parmesan cheese (in that order). Place in oven and bake for 15-20 minutes, or until cheese melts and turns a golden brown color. Serve warm.
