Here's a fun treat for the weekend!
Ingredients
2 cups flour
1 cup light brown sugar
1 teaspoon salt
2 teaspoons baking powder
1 cup buttermilk or yogurt (I used plain yogurt)
4 Tablespoons unsalted butter, melted
2 eggs
2 cups fresh or frozen blueberries
For the glaze:
2 cups powdered sugar
1 teaspoon vanilla extract
4-6 Tablespoons milk
Directions
Preheat oven to 350 degrees. Grease donut pans with cooking spray for butter.
In a large bowl, mix all the dry ingredients together and set aside. In another bowl, whisk the buttermilk or yogurt, butter, and egg together. Stir the wet ingredients into the dry ingredients and mix just until combined. Fold in the blueberries.
Fill the donut pans with batter. Bake for 20-22 minutes.
While donuts are cooling, whisk together the ingredients for the glaze. When donuts are cooled, dip the tops in the glaze. Note: If you are freezing these donuts or not serving immediately serving, store them in an airtight container BEFORE glazing.
