Taco Bowls

I grew up using the taco bowl pans to create an authentic taco bowl for taco salad topped with salsa and cheese deliciousness. But now in my own kitchen since I don't yet own those pans, I stumbled across this recipe that uses something I already have: muffin tins! These are so fun to make for a different twist on tacos. It's especially delicious with homemade salsa.


Ingredients

  • 6-inch corn tortillas

  • Olive oil or canola oil cooking spray

Directions

Preheat your oven to 375 degrees.


In the microwave, heat the tortillas for 30 seconds or until very warm (this step is crucial for the success of the bowls. See Notes below.)


After warming, lightly coat each side of the tortilla with cooking spray.


Turn a 12-cup muffin tin upside down and nestle a tortilla in the space between 4 cups to form a "bowl". Repeat with the remaining tortillas.


Bake until firm and beginning to brown, about 15 minutes. Cool on wire rack.


Notes

It is essential that the tortillas be warm to be conformable to the pan. If they are simply room temperature, they will not stay in place and be the shape you want them, so be sure not to skip this step.
