This stew is a family favorite I grew up with that used the fresh vegetables from our garden. It's tasty over pasta or rice or simply on its own.
Ingredients
For the meat:
1 pkg. lean ground turkey
1 onion, chopped
1 teaspoon nutmeg
1 teaspoon thyme
Smidgen cayenne pepper
1 1/4 Tablespoons Worcestershire sauce
2 1/4 Tablespoons ketchup
For the stew:
2 zucchini, chopped
2 yellow squash, chopped
1 green pepper, chopped
1/2 bag frozen green beans, optional
2 cans diced tomatoes
1-2 cans tomato juice
Smidgen garlic powder
1-2 teaspoons Mrs. Dash Table Blend
Directions
In a large pot, brown the turkey meat with the onion, seasonings, Worcestershire sauce, and ketchup. Drain well and return meat to the pot.
Add the chopped vegetables, tomatoes, tomato juice, garlic powder, and Table Blend seasoning to the meat. Heat to a boil and allow to simmer on medium heat for at least an hour to allow flavors to blend.
Serve over pasta or rice with grated Parmesan cheese.
Note: This stew freezes well, so you can make a large pot and freeze for later use.
